Slow Cooked Chuck Roast – 2 Ways

Chuck roast is a big, juicy slab of beef that is often more affordable than the popular cuts of steak. The good news is it’s just as delicious when done right. It can be a little tough & fatty, so slow cooking it is my favorite approach. This recipe can be done in the dutch oven or the crockpot, and always turns out amazing.

I like to meal prep this as a lone protein, but if you want, just adding some potatoes, carrots, and onions leaves you with a classic roast and main course dinner.

Slow Cooked Chuck Roast - 2 Ways

Melt-in-your-mouth chuck roast is the perfect protein to meal prep for the week.

Ingredients

  • 3-4lbs Chuck Roast
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Worcestershire Sauce
  • 1/2 cup Olive Oil
  • 1/2 cup Bone Broth
  • 2tbsp Minced Garlic
  • 1tsp Black Pepper
  • 1/2 tsp Salt
  • 1tsp Oregano

Instructions

CROCK POT INSTRUCTIONS:

  • Rub the meat with salt, pepper, oregano, worcestershire and minced garlic. Thoroughly cover every side.
  • Place in crockpot, top with balsamic vinegar, olive oil, and bone broth.
  • Cook on low for 6-8 hours or on high for 3-5 hours.
  • You will know it's finished when it's falling apart. It should be easily shreddable with a fork.

DUTCH OVEN INSTRUCTIONS:

  • Preheat the oven to 350.
  • Rub the meat with salt, pepper, oregano, worcestershire and minced garlic. Thoroughly cover every side.
  • Heat olive oil on low in dutch oven. Braise the meat on each side until brown. Approximately 2-3 minutes each side.
  • Turn off the stove, add the rest of the ingredients, covering the top of the meat. If you have brown bits at the bottom of the pan, it may be useful to remove the meat and mix the brown bits with the liquids first.
  • Cook in the oven at 350 for 2-3 hours. Cooking time will depend on your oven and the amount of meat. Similar to the crockpot recipe, it should be shreddable with a fork when finished.
  • Optional: shred & cook with the lid off for another 20-30 minutes for crunchy ends.

Notes

This is a great recipe for a traditional chuck stew approach by adding carrots, onions, and potatoes.
