Crock Pot Asian Inspired Stew Beef & Veggies

One of the best dishes you can order from your local chinese spot is beef & broccoli. A sweet, tangy sauce covering lots of beef chunks & broccoli is the perfect comfort meal.

This recipe is my crock pot take on beef and broccoli. Why, you ask? Well, two reasons. One, crock pots are my saving grace. I can just throw things in there, leave the house, come back and dinner is made. When you’re pressed on time but still want to eat at home and have something nutritious, you can throw a few things in the slow cooker. It almost always tastes like you’ve been working hard cooking all day.

The second reason is I love slow cooked stew beef. The crockpot breaks the meat down slowly over the day, leaving you with a melt-in-your-mouth meat rather than it being chewy or tough. While some beef and broccolis may be traditionally chewy, I will always choose this soft and flavorful version. It soaks up the sauces, thoroughly breaks down the meat, and leaves you with a savory and sweet dinner.

I like to meal prep the meat & store it alone, and then saute it with the veggies to heat it up. If you want to also meal prep the veggies to save time, I throw them into the crockpot at for the last 20-30 minutes.

Crock Pot Asian Inspired Stew Beef & Veggies

A simple & easy take on the Asian classic beef & broccoli.

Ingredients

  • 2lb Stew Beef Chunks
  • 12 oz Green Beans (or veggies of choice!)
  • 1/4 cup Japanese Barbecue Sauce or Teriyaki Sauce
  • 1/4 cup Soy Sauce or Coconut Liquid Aminos
  • 2 Tbsp Sesame Oil
  • 2tbsp ACV
  • 1tsp Minced Ginger
  • 3 Garlic Cloves, minced
  • 2 tbsp Sriracha (optional - If you like a little heat)
  • Sesame Seeds for garnish (optional)

Instructions

Throw everything BUT THE VEGGIES into the crockpot. Cook on low for 6-7 hours or on high for 3-4 hours. Once the meat is close to finished, throw in the mixed veggies and cook for another 20-30 minutes on low.

I prefer using the crock pot for stew meat so it's soft and tender. You can always take the traditional route and cook it all on the stove.

I have also saved the leftover sauce to saute fresh veggies and heat up the leftover meat.

Notes

Bachan's Japanese BBQ Sauce is what I've been using in my dishes lately. It has all organic & clean ingredients, is affordable, and is similar to teriyaki with it's own little twang. I highly suggest trying it!
