Simple & Healthy Banana Bread

Banana bread is a great way to use up overripe bananas and satisfy your sweet tooth, so why not make it a healthy experience? This recipe has a classic banana bread base but is sweetened with maple syrup. It has some greek yogurt to assist with texture & add a little extra protein. With high quality ingredients, notes of cinnamon, a moist texture & delicately sweet taste, you can have your cake (bread?) and eat it too. 😉

This recipe is one of my favorites in the sweets section. It’s very close to a typical banana bread recipe with just a few tweaks to upgrade the nutrition. You can also add whatever fix ins for texture and taste. My personal favorite additions are walnuts and semi-sweet chocolate chips.

Simple & Healthy Banana Bread

Ingredients

  • 3 VERY ripe bananas, mashed
  • 2 eggs, preferably room temperature
  • 1/3 cup maple syrup (if you want it sweeter or bananas aren't super ripe, use 1/2 cup)
  • 1/2 cup greek yogurt
  • 1 tsp vanilla extract
  • 1 & 3/4 cup bread flour (I use King Arthur organic unbleached)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup olive oil (preferably spanish for a lil smoky taste)

Instructions

  1. Preheat the oven to 350. Add a thin layer of oil or butter to your bread pan.
  2. Mash the bananas in a large bowl.
  3. Mix in the eggs, maple syrup, greek yogurt, vanilla, and olive oil into the mashed bananas.
  4. In a separate bowl, mix your dry ingredients - flour, baking soda, cinnamon, and salt.
  5. Mix the dry ingredients into the wet ingredients slowly, making sure you are thoroughly mixing everything.
  6. If you want, fold in your fix ins (walnuts, chocolate chips, etc.)
  7. Pour the batter into the oiled bread pan. Bake for 45-60 minutes at 350 or until slightly golden on top & a butter knife comes out clean. The time will depend on the pans you use. I usualy use 2 bread pans for this recipe and divide it equally, it takes about 45 minutes. Enjoy!

Notes

*The nutrition facts are for the base recipe with no fixins. Added walnuts, choc chips, etc. would change the macros.
