Fajita bowls are a delicious and easy meal to have in your weekly rotation. With protein, veggies & endless ways to dress them up, you really can’t go wrong. Traditional fajitas are served with hot tortillas if you want to have a more carbohydrate dense meal.
My favorite way to make fajitas is with sirloin steak. I fry up the steak in a cast iron pan with butter & olive oil. Once it’s done, I set it aside and cook the peppers & onions in the same pan with the leftover oil & steak juices. This way the steak gets to sit for a few minutes after cooking & the veggies soak in all the flavor and still have some crunch to them.
You can garnish your fajita bowls with whatever you please. Sour cream, sliced avocado, salsa, parsley, cilantro, the list goes on. My personal favorite addition to this is mashed avocado mixed with a spoonful of greek yogurt, a splash of olive oil and lemon, salt, pepper & cumin. It’s a cooling avocado cream that goes great with this hot meal.
**This is a single serving recipe, but it might make more veggies than you prefer. I like to save some to have the same meal the next day with a freshly cooked steak. If you want no leftovers and are not huge on the veggies, just do 1/2 of the onion and pepper. Likewise, you can double or triple the veggies if you’re trying to meal prep an easy side for the week.**
FAJITA BOWL
A protein & veggie dense meal you can dress up in endless ways.
Ingredients
- 4-6 oz sirloin steak (single serving - your preferred amount)
- 1 red pepper, sliced into thin strips
- 1 small yellow onion, sliced into thin strips
- 1/4 teaspoon salt (for steak)
- 1/4 tsp salt (for veggies)
- 1/4 tsp pepper
- 1/4 tsp cayenne
- 1/4 tsp oregano
- Optional garnishes & sides: avocado slices, guac, salsa, parsley, cilantro, lime slice
Instructions

- Season your steak generously with salt and set aside.
- Heat up a cast iron or stainless steel skillet. Add 1/2 tbsp butter & a splash of olive oil.
- Cook your steak to your preferred wellness (rare, medium, well done, etc.)
- While it's cooking, slice your onions & peppers into long, thin slices.
- Once done cooking, set the steak aside on a plate. Keep the stove on, add the veggies to the same oil. Once in the pan, season them with salt, pepper, cayenne, and oregano.
- Cook them for 3-5 mnutes max. The pan will already be very hot, and you want them to still have a little bit of crunch to them.
- Slice your steak into thin pieces. Plate your veggies next to it, add your preferred garnishes & sides, and enjoy!
